Recipe for ham croquettes

Ingredients (for 6 guests)

  • 1 clove garlic
  • Olive oil
  • 1 purre
  • 100 ml cream
  • 3 medium-sized eggs
  • 4 cups skim milk (1 liter)
  • 1 cup flour (180 g)
  • 2 trays serrano ham (200 g)
  • 5 tablespoons butter (100 g)
  • Breadcrumbs (quantity needed)
  • Optional: onion, black pepper, nutmeg
  • Other: 1 ham bone

Approach

  1. Sift the flour and set aside.
  2. Then heat the butter in a saucepan to melt it.
  3. Chop the ham into small pieces and set aside.
  4. Finely chop the leeks into small pieces and do the same with the garlic.
  5. Once the butter is melted, add the leeks and garlic to poach it. When the garlic is browned, add the ham and cook everything for a few minutes.
  6. Heat the milk and cream in a saucepan. Add the ham bone so it becomes good and tasty. Be careful not to let the milk boil.
  7. Add the flour and stir continuously to mix while sautéing.
  8. Gradually add the warm milk and cream mixture to the onion, ham and butter mixture. It is important that the mixture is smooth, even and without lumps.
  9. Add the spices to your liking and pour it into a bowl.
  10. Now let it cool for about 2 to 3 minutes, so that the ingredients settle and the mixture thickens.
  11. Set out three containers with the following order of contents: flour, eggs and breadcrumbs. Once you have shaped the croquettes, use each of the containers to dip them before frying them. It is important to knead them by hand with a drop of olive oil.
  12. Fry the croquettes with a lot of olive oil until they are golden brown on all sides.

  • 1 cup cornstarch (150 g)

  • 2/3 cup serrano ham (100 g)
  • Breadcrumbs (quantity needed)
  • Spices: salt, freshly ground black pepper

  1. Dilute the cornstarch in a little milk.
  2. Take the chicken off the bone and shred it as much as you can. Then run it through a grinder.
  3. Finely chop the serrano ham. Then set it aside.
  4. Boil it together with the rest of the milk and add a pinch of salt. When it reaches boiling point, add the cornstarch to dilute it and stir to thicken the mixture.
  5. Add chicken and ham. Stir constantly to get all the ingredients to mix well. Once you have a dough that is consistent and flexible enough, you can turn off the heat and let it cool.
  6. When the dough has cooled, continue by kneading the croquettes just as in the previous recipe.
  7. Dip them in flour, eggs and breadcrumbs, and fry them in plenty of olive oil.
