  • 3 large summer squashes, cut into 1.5 cm slices.
  • 565 grams of minced meat
  • 2 medium onions, cut into cubes
  • 1 tablespoon garlic powder
  • 1 red pepper, cut into thin slices
  • 2 tablespoons olive oil
  • 1 box of tomato puree
  • 1 tbsp basil
  • 200 grams of grated mozzarella cheese
  • 1 pinch of dry thyme
  • 1 tablespoon dried oregano
  • 200 grams of parmesan cheese
  • 1 pinch ground black pepper
  • Salt to taste

Preparation

Tomato puree
  • First preheat the oven to 200 C.
  • Second, heat the olive oil in a pan. Add the minced meat and cook on medium heat for 4-5 minutes.
  • Then add the pepper, garlic powder and the square onion pieces and simmer for approx. 5 minutes.
  • Then incorporate the tomato puree, basil, thyme, oregano, salt and pepper in the pan. Mix everything well and reduce the heat. Cook for 5 minutes.
  • Pour a third of the meat sauce into a saucepan.
  • Top it off with a layer of slices of summer squash followed by a layer of cheese.
  • Repeat the procedure and layer the ingredients until you either fill up the saucepan or run out of ingredients ( save some cheese for the top layer ).
  • Fry it for approx. 30 minutes or until the cheese has melted and taken on a golden color.
  • Finally, take it out of the oven and let it cool a bit before serving.
